With plum season in full swing, it's time to make a delicious plum pie. Thin, soft dough and juicy filling - the perfect dessert for the beginning of autumn. We offer a simple and easy recipe for plum pie, which even not big fans of this fruit will appreciate.

Ingredients for the dough (for a mold d=24 cm):
- 500 g flour
- 250 g butter
- 200 g sugar
- 4 yolks
- salt
- flour for the working surface
- butter and flour for the mold
Filling ingredients:
- 800 g plums
- 400 g sugar
- 1 yolk
- 30 g potato starch
- 5 tsp. ground cinnamon
Recipe step by step:
- 1. Pour flour onto a work surface and add butter, cut into pieces. Mix everything together, forming large crumbs.
- 2. Collect the crumbs in a pile with a small depression in the center.
- 3. Add sugar, yolks, and a pinch of salt.
- 4. Quickly knead into a homogeneous, smooth dough, wrap in cling film and place in the refrigerator for 20 minutes.
- 5. Rinse the plums, dry them, and remove the pits.
- 6. Place in a saucepan, add sugar, cinnamon and cook over low heat for about 20 minutes, stirring constantly.
- 7. When the plums turn into a soft puree, add starch diluted in a small amount of water. Mix well until the plum puree becomes thick.
- 8. Turn on the oven and preheat it to 180 degrees.
- 9. Sprinkle the work surface with flour. Roll out the dough into a sheet 4 mm thick. Cut out a circle with a diameter of 28 cm from the dough.
- 10. Grease a baking dish with butter, sprinkle with flour and line with dough. Poke holes in the bottom with a fork and fill with plum filling.
Tip: it is better to bake the cake in a ceramic form in which you can serve. After all, the finished pie is very soft, so it will be difficult to get it out of the mold.
- 11. Roll out the remaining dough again and cut out a circle with a diameter of 24 cm.
- 12. Cover the plum filling with the cut-out dough and carefully pinch the edges of the pie.
- 13. Roll out the remaining dough again into a thin layer and cut out decorations in the shape of leaves.
- 14. Place the dough leaves on the surface of the pie and brush everything with egg yolk.
- 15. Bake in a preheated oven for 35 minutes.
When serving, we recommend adding a scoop of your favorite ice cream to a piece of plum pie.
