Peach Pie - recipe
A simple, quick and delicious recipe for a juicy peach pie. A great light dessert that will win you over from the first bite.

Ingredients for a square shape (20-22 cm):
- 200 g of flour
- 100 g of sugar
- 100 g butter (softened)
- 2 egg yolks
- zest of 1 lemon
- salt
- flour for the work surface
- butter and flour for the mold
For the filling:
- 800 g of peaches
- 3 eggs
- 100 g of sugar
- 150 ml of milk
- 100 ml of cream
Recipe step by step:
- Mound the flour on the work surface, make a well in the center and put the softened butter, sugar, yolks, lemon zest and a pinch of salt inside.
- Rub the ingredients with your fingers to form a dough.
- Form a ball of dough, wrap in cling film and refrigerate for 30 minutes.
- Preheat the oven to 180 degrees.
- Grease the baking dish with butter and sprinkle with flour.
- Roll out the dough into a square sheet, line the dish, pierce with the tines of a fork and trim the edges.
- Cut the peaches into 6-8 wedges and arrange them on the dough.
- In a bowl, begin to beat the eggs with sugar until the mixture turns white. Continue beating, add milk, then cream. Beat until sugar is completely dissolved.
- Pour mixture over peaches and bake in preheated oven for about 60 minutes.
- When done, remove pie and let cool.
When serving, sprinkle with powdered sugar or add vanilla ice cream if desired.
