Ingredients for the dough:
- 6 egg whites
- 300 g of powdered sugar
- 2 tbsp. corn starch
- citric acid
Ingredients for cream and filling:
- 300 g of soft cheese
- 250 ml of cream (from 33% fat)
- 40 g of powdered sugar
- 200 g of your favorite berries or fruits
Recipe step by step:
1. In a deep bowl, beat the egg whites with a mixer at low speed until light foam.
2. Add powdered sugar and beat at high speed for up to 10 minutes until stiff peaks form.
3. Next, add a pinch of citric acid and corn starch and mix slowly until smooth.
Note: citric acid can be replaced by 1 tsp. lemon juice
4. Heat the oven to 160 degrees. Cover the sheet with parchment.
5. Spread the protein mass on the parchment in an even layer.
6. Send to the oven for 20-30 minutes. The meringue should have a crispy crust, while the inside of the cake will remain soft.
7. Take out the ready meringue, cover with parchment and turn over. Remove the parchment on which it was baked and let cool.
Preparation of cream and filling:
8. Using a mixer, mix soft cheese and cream until smooth.
9. Add powdered sugar and beat until a creamy texture is formed.
10. Chop the berries or fruits into small pieces. We leave some for decoration.
Tip: Strawberries, raspberries or cherries are usually used for the filling. You can also take peach or nectarine.
We collect the roll:
11. Spread 2/3 of the cream evenly over the entire cake.
12. Put the filling and carefully roll everything into a roll.
13. Before serving, decorate with cream and the fruits.
