Cherry roll - Great light dessert

Ingredients for the dough:
- 2 eggs
- 75 g flour
- 75 g sugar
- vanillin packet
- butter for baking sheet
Ingredients for filling and decoration:
- 250 g cherries
- 300 ml cream
- 1 tbsp powdered sugar
- zest of 1 orange
Recipe step by step:
Preparing the biscuit:
- Turn on the oven and preheat it to 180 degrees.
- In a bowl, using a mixer, beat the eggs with sugar until foamy cream appears.
- Sift the flour and vanilla into the resulting mixture and mix thoroughly.
- Grease a baking sheet with butter, cover it with parchment, which is also grease with butter.
- Place the dough on a baking sheet, smooth it out and bake in a preheated oven for 10 minutes.
- Take out the finished biscuit and turn it over onto a damp towel. Carefully remove the parchment, roll the biscuit into a roll and leave to cool.
Tip: to make the parchment easier to come away from the biscuit, you need to lightly moisten it with water.
Preparing the filling:
- In a chilled bowl, begin whipping the cream on low speed.
- Once the cream begins to thicken, add the orange zest and powdered sugar, increasing the speed of the mixer.
Note: you can make a lower-calorie version of the cream by replacing the cream with cottage cheese, and increasing the amount of powdered sugar to 2 tbsp.
- Wash the cherries, dry them, remove the pits and cut them into pieces.
Assembling the roll
- Unwrap the biscuit, coat with cream and sprinkle with cherry pieces.
- Roll the biscuit again, wrap it in parchment and put it in the refrigerator for 2-3 hours.
- Before serving, remove the parchment, cut the roll into pieces and, if desired, decorate with cherries.
