Raspberry marshmallow

Ingredients:
- 250 g raspberries (fresh or frozen)
- 200 g sugar
- 12 g gelatin
- 80 ml water
- 1 tsp lemon juice
- 1 tsp vanilla extract
Step-by-step recipe:
- Puree the raspberries and rub through a sieve to remove the seeds.
Note: if desired, raspberries can be replaced with your favorite berry - currants, blueberries, strawberries.
- Soak gelatin in water for 10 minutes, then dissolve it in a water bath.
- Bring sugar and water to a boil, add lemon juice and vanilla extract. After the sugar has dissolved, remove from heat.
- Add raspberry puree to hot syrup, mix thoroughly. Then add the dissolved gelatin and beat with a mixer until the mixture becomes fluffy, this may take 15-20 minutes, depending on the power of the mixer.
- Using a pastry bag or spoon, place the mixture on parchment. Form the marshmallow to your taste.
- Cool the marshmallow until completely solidified, store in the refrigerator.
Chocolate marshmallow

Ingredients:
- 100 g dark chocolate (cocoa content 70%)
- 250 g sugar
- 10 g gelatin
- 120 ml water
- 10 g vanilla sugar
Step-by-step recipe:
- Melt the chocolate in a water bath or in the microwave until liquid.
- Soak the gelatin in water for 10 minutes, then dissolve it in a water bath.
- Mix sugar with water and bring to a boil. When the syrup starts to boil, add vanilla sugar and cook for another 5 minutes.
- Add melted chocolate to hot sugar syrup, stir until smooth.
- Add dissolved gelatin to chocolate mixture and beat well with mixer for 20 minutes.
- Put the mixture in a mold or use a pastry bag to form marshmallows.
- Let the marshmallows cool. Store ready-made chocolate marshmallows in the refrigerator.
Tips for successful marshmallow preparation:
- Soak gelatin in cold water, then dissolve it in a water bath or microwave, but do not allow it to overheat.
- After forming the marshmallow, do not rush to cool it in the refrigerator immediately. First, let it harden at room temperature.
