Valentine's Day Desserts: Raspberry Tiramisu, Berry Cheesecake, Chocolate Eclairs

Valentine's Day is a great opportunity to please your loved ones not only with attention, but also with delicious desserts. And to make the festive atmosphere even more romantic, we offer several sweet recipes that are easy to prepare at home.


Raspberry Tiramisu 

Raspberry tiramisu is a fresh and interesting version of the classic Italian dessert, in which instead of traditional coffee we use berry raspberry impregnation. This version of tiramisu will give you a unique combination of delicate cream, berry sourness and light sweet taste of cookies.

Ingredients:

For raspberry syrup:

  • 200 g raspberries (fresh or frozen)
  • 2 tbsp sugar (can be replaced with honey for a more natural taste)
  • 1 tbsp water
  • 1 tsp lemon juice (to balance the taste)

For the cream:

  • 250 g Mascarpone cheese
  • 200 ml cream (35%)
  • 100 g sugar
  • 1 tsp vanilla sugar

To assemble tiramisu:

  • 300 g Savoiardi biscuits
  • raspberries for decoration

Recipe step by step:

  1. Bring raspberries, sugar, water and lemon juice to a boil over medium heat.
  2. Reduce heat and simmer for 5-7 minutes, stirring, until mixture thickens.
  3. Remove from heat, let cool and strain through a sieve.
  4. Whip cream until soft peaks form.
  5. In a separate bowl, combine mascarpone cheese, sugar and vanilla sugar. Stir until smooth.
  6. Slowly add whipped cream to Mascarpone, stirring gradually so as not to disturb the airy texture.
  7. Quickly dip Savoiardi into cooled raspberry syrup (no more than 2-3 seconds, so that they do not get too soggy).
  8. Place the first layer of cookies on the bottom of the pan (you can use a rectangular or round pan).
  9. Cover with half of the cream, spreading it evenly with a spatula.
  10. Repeat the process with the second layer of Savoiardi and cream.
  11. Sprinkle the last layer of cream with fresh raspberries.
  12. Cover the form with film or foil and put it in the refrigerator for 4-6 hours, or better yet, overnight, so that the dessert soaks well and acquires the desired texture.
  13. Before serving, you can decorate with cocoa powder for contrast (if you want to keep the traditional look). Enjoy!

Advice:

  • If raspberries are hard to find, you can replace them with other berries, such as strawberries or blueberries, but it is raspberries that give a special aroma and sourness that perfectly combine with the cream.
  • For a more intense berry flavor, you can add a few spoons of raspberry puree directly to the cream, mixing it with Mascarpone.

Chocolate-raspberry eclairs

An ideal option for those who love desserts with several bright flavors at once: crispy dough, delicate cream, chocolate and raspberry - a fantastic combo that is guaranteed to surprise your loved one.

Ingredients:

For the dough:

  • 120 g flour
  • 150 ml water
  • 100 g butter
  • 3 eggs
  • 1 tsp sugar
  • a pinch of salt

For the cream:

  • 300 ml milk
  • 100 g sugar
  • 2 eggs
  • 20 g flour
  • 50 g butter

For chocolate glaze:

  • 100 g dark chocolate
  • 50 ml cream (33% fat)

For the raspberry sauce:

  • 150 g raspberries
  • 50 g sugar

Recipe step by step:

  1. To make the dough, combine water, butter, salt and sugar in a saucepan.
  2. Bring to a boil, add flour and stir until smooth. Cook for another 1-2 minutes over low heat.
  3. Beat in the eggs one at a time, mixing well after each.
  4. Place the dough in a pastry bag and form the eclairs on a baking sheet lined with parchment.
  5. Bake in a preheated oven at 200°C for 20-25 minutes, until risen and golden brown.
  6. For the cream, combine milk and sugar and bring to a boil.
  7. Beat the eggs with flour, gradually pour in hot milk, stirring constantly. Cook over low heat until thickened. Add vanilla and butter.
  8. For the raspberry sauce, combine the raspberries with sugar, boil for a few minutes and rub through a sieve.
  9. Melt the chocolate with cream for the glaze.
  10. When the eclairs have cooled, make a small cut, fill with cream and dip in chocolate glaze. Serve with raspberry sauce.

Berry Cheesecake in glasses

This light cheesecake is a great idea for a Valentine's Day dessert, especially if you want to surprise your significant other with not only a delicious but also a beautiful dish.

Ingredients:

  • 150 g cookies (shortbread or cocoa)
  • 70 g butter
  • 300 g Philadelphia cheese
  • 200 ml cream (30% fat)
  • 100 g sugar
  • 150 g berries (raspberries, strawberries or blueberries)
  • 10 g gelatin

Recipe step by step:

  1. Crush the cookies into crumbs and mix with melted butter.
  2. Fill the bottom of the glasses in which you will serve the dessert with crushed cookies and tamp well.
  3. For the filling, beat the cheese with sugar until smooth. Add whipped cream and mix gently.
  4. Soak the gelatin in 50 ml of cold water for 10-15 minutes, then melt in a water bath and pour into the cheese mass.
  5. Place the cheese mass on a layer of cookies and refrigerate for 3-4 hours to stabilize.
  6. Before serving, decorate the cheesecake with fresh berries.
