Preparation:
- In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
- In another bowl, beat the egg, add milk, pumpkin puree and vegetable oil. Mix until smooth.
- Combine dry and wet ingredients, stirring gently.
- In a preheated frying pan, bake pancakes on both sides until golden brown.
- Serve with maple syrup.
