Pumpkin pancakes with maple syrup

Ingredients:

  • 250 ml milk
  • 200 g flour
  • 150 g pumpkin puree
  • 2 tbsp sugar
  • 2 tbsp l vegetable oil
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • maple syrup for serving (can be replaced with honey)

Preparation:

  1. In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
  2. In another bowl, beat the egg, add milk, pumpkin puree and vegetable oil. Mix until smooth.
  3. Combine dry and wet ingredients, stirring gently.
  4. In a preheated frying pan, bake pancakes on both sides until golden brown.
  5. Serve with maple syrup.

 

Pumpkin muffins with nuts

Ingredients:

  • 250 g flour
  • 200 g pumpkin puree
  • 200 ml milk
  • 150 g sugar
  • 150 g vegetable oil
  • 100 g chopped walnuts
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Preparation:

  1. Preheat the oven to 180°C.
  2. Prepare the muffin tins by filling them with paper baskets.
  3. In one bowl, mix the flour, sugar, baking powder, baking soda, cinnamon and salt.
  4. In another bowl, beat the eggs, add milk, vegetable oil and pumpkin puree. Mix until smooth.
  5. Gently mix the dry and wet ingredients. Add the nuts.
  6. Fill the muffin tins 2/3 full of the batter and bake for 20–25 minutes. Let cool before serving.

  • 150 g sugar
  • 3 eggs
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract

Preparation:

  1. Preheat the oven to 180°C.
  2. Roll out the shortbread dough and place it in the tart tin, lifting the edges.
  3. Melt the chocolate in a small saucepan over a bain-marie.
  4. In a bowl, combine pumpkin puree, sugar, eggs, cinnamon, vanilla and a pinch of salt. Add melted chocolate and mix well.
  5. Pour filling into prepared base and bake for 30-35 minutes until filling is set.
  6. Leave to cool before serving. Decorate with chocolate chips or nuts.

Preparation:

  1. Preheat oven to 180°C.
  2. Roll out the puff dough and place it in the pie dish, lifting the edges.
  3. In a large bowl, combine the pumpkin puree, sugar, eggs, cream, cinnamon, nutmeg, ginger and a pinch of salt. Mix well until smooth.
  4. Pour the mixture into the prepared pie dish.
  5. Bake the pie for about 45 minutes, until the filling is firm.
  6. Let cool. When serving, top with a scoop of vanilla ice cream. Enjoy!

 

Pumpkin Cheesecake with Coconut Base

  • 1 tsp vanilla extract

  • nutmeg

Preparation:

  1. Mix coconut flour and melted butter.
  2. Spread this mixture on the bottom of the baking dish, forming an even layer.
  3. Bake at 180°C for 10 minutes.
  4. In a large bowl, combine pumpkin puree, ricotta, sugar, eggs, vanilla, cinnamon and a pinch of nutmeg. Mix well until smooth.
  5. Pour the filling onto the prepared base and bake for another 40-45 minutes at 160°C.
  6. Let it cool, then refrigerate for a few hours.
  7. Serve with vanilla ice cream or whipped cream.
