Muffins with cherries

A simple and delicious recipe for tender cupcakes with a sweet summer berry – sweet cherries.

Ingredients:

  • 300 g sweet cherry
  • 60 g softened butter
  • 3 tbsp sugar
  • 250 g flour
  • 2 tsp. baking powder
  • 2 eggs
  • 200 ml milk
  • 50 g powdered sugar
  • salt
  • butter and flour for molds

 

Recipe step by step:

  • 1. Wash the cherries, remove the pits, and cut into pieces.

Tip: sweet cherry can be replaced with cherry, but then the amount of sugar needs to be slightly increased, since cherry are more acidic.

  • 2. In a bowl, combine softened butter with sugar and beat until a homogeneous cream is obtained.
  • 3. Then add flour with baking powder through a sieve and mix gently with a spoon.
  • 4. Next, add eggs, milk and a pinch of salt and mix thoroughly until smooth.
  • 5. At the end, add chopped cherries along with the juice that has stood out.
  • 6. Preheat the oven to 170 degrees.
  • 7. Grease the molds with butter and sprinkle with flour. Spread the mixture evenly over the molds. Place them on the oven rack and bake for about 25 minutes.
  • 8. Remove the molds from the oven and let them cool slightly. Remove warm cupcakes from molds and sprinkle with powdered sugar.
  • 9. Serve with a scoop of your favorite ice cream.
