The Maslenitsa week has begun, and therefore it is time to remember the same recipe, according to which it will be easy and quick to prepare delicious pancakes. We offer you the proven method of "three glasses", with which thin and elastic pancakes are guaranteed even for beginners.

Custard pancakes "3 glasses"

Ingredients:
- 1 glass of milk
- 1 glass of flour
- 1 glass of boiling water
- 2 eggs
- 1 tbsp. l. sugar
- 2 tbsp. l. vegetable oil
- a pinch of salt

Step-by-step recipe:
- Beat two eggs in a deep bowl, add sugar and a pinch of salt. Mix thoroughly with a whisk until smooth.
- Pour in a glass of milk and gradually add the sifted flour. Stir to avoid lumps (the dough will be thick at this stage).
- While constantly and intensively stirring the dough, pour in a glass of boiling water. This step will “brew” the flour, making the pancakes elastic and tender.
- Add the vegetable oil, mix again and let the dough rest for 5-10 minutes.
- Fry the pancakes in a well-heated frying pan on both sides until golden brown. Thanks to the oil in the composition, you only need to grease the pan before the first pancake.
Sweet combinations
- Classic cheese: homemade cottage cheese, grated with sugar, a pinch of vanilla and raisins. For a more delicate texture, you can add a spoonful of sour cream or cream.
- Apple with cinnamon: finely chopped apples, simmered in butter with sugar and cinnamon until soft.
- Chocolate-nut: filling made of chocolate paste, chopped hazelnuts and banana slices.
- Poppy seed: grated poppy seeds with sugar and honey (tastes great if the pancakes are folded into triangles).
Savory options
- Mushroom with chicken: fried mushrooms with onions, combined with boiled chicken fillet and a spoonful of cream cheese.
- With red fish: lightly salted salmon or trout, cream cheese (cream cheese) and fresh dill.
- Ham and cheese: thin slices of ham and hard cheese that melts as the pancake is heated in a pan.

Special ice cream serving
To turn ordinary pancakes into a real dessert, serve them hot with a scoop of cold ice cream.
Tip: Classic ice cream or vanilla ice cream are best. The temperature contrast between the hot pancake and the cold ice cream creates an incredible taste effect.
